What's the difference between the two, like which is the higher end, and what do they stand for?

There are a couple of version regarding the GTS card.
In the GTS section you have the: GTS 320mb, GTS 640mb and the GTS 512mb.
The GT is a later released card which was based on the g92 core. The GTS 512mb is also based on the g92 core if i'm not mistaken.

In order of higher end:
8800 ULTRA
8800 GTX
8800 GTS 512mb
8800 GT
8800 GTS 640mb
8800 GTS 320mb

GTX and Ultra are not worth buying right now. Get a GT 512 or GTS 512.

for 200-250$ the GT is a much better bargain considering you don't need all the extras like a GTS or GTX such as enough power and space. i can fit an 8800gt in my shuttle but couldnt fit a GTS/GTX

Here's a graph for card performance running oblivion with graphic detail and AA maxed, on 1280 resolution:

Check out the performance running different games on different settings if you want, but most of the charts confirm that the GT512 is a great buy for it's price. Personally I'd recommend one of the SSC editions as they run a little faster than the standard cards and the price difference is very small.

Although #2 is correct, generally Nvidia cards follow this naming scheme in regards to their performance. From high to low end:

Ultra
GTX
GTS
GT
GS
LE
SE

With the increasing number in a series offering better peformance as well.

Yes that's right gt is better than the gs.

#6 I don't see a 512mb GTS on there. and also, that says 2007, and there was a newer/better GTS released in december

I've got a BFG 8800GTS 512 OC. I'm very happy with its performance. It's ALMOST on par with a GTX, but SLIGHTLY better than the GT. I think there's very little difference between the GTS 512 and GT. Both would be a good buy.
